March 19, 2012

Hello Everybody!! 🙂

How was your weekend ?!! Mine was filled with falling slightly ill, continuing an unfinished project,  friends, disagreements and pie! Just another weekend right ? When I was younger I loved green apples, but as I grew older I decided green apples were the worst tasting apples ever! It’s sour and its.. green… 🙂  am on the red apple team now!

I came across a lot of recipes that called their apple pies “RUSTIC” , so what does rustic mean ?

Really Rustic Apple Pie means – not pretty (because I wanted the pie quickly), but tastes soo amazing, and you cannot judge it by its appearance Pie! yup!

If you follow this recipe step by step, you are sure to have an amazing crust with the best apple filling. It is ridiculously easy to make and It takes about 2 hrs ?Mostly because you have to wait.. I hate waiting for food, especially when am hungry and I want it now.. 🙂 So that’s why it’s not just an Apple Pie, it is Really Rustic Apple Pie!

Makes 2 rustic apple pies

1 large egg

for the crust you will need;

2 cups all-purpose flour

1/2 cup of cold water, I usually get a cup of water and leave it in the freezer until I need it

Sugar – this is a decision you will have to make with yourself and your taste buds..and tummy 🙂  put as much or as little as you want.

2 sticks of unsalted butter

a pinch of salt

for the filling you will need;

2 apples – sliced into cubes

sugar – see above 🙂

4 teaspoons of cinnamon sugar

2 teaspoon of nutmeg

1/2 teaspoon of cream of tartar

4 tbsp lemon juice

Pre-heat oven to 375 degrees F (190 degrees C).

to make the crust

In a bowl, mix flour, sugar and salt.

Put in the cold butter, and mix it with the flour mixture until it looks like crumbs

Stir in ice water and use your hands to mix it together

Knead the mixture until it becomes a big ball of sweetness 🙂

Split evenly into two separate balls.

Wrap each ball into a cling film, and use a rolling-pin to smoothen/ flatten  it, do the same for the other ball.

Place it in the refrigerator for an hr or 2, to make it firm.

to make the filling

Cut two apples into cubes, and separate them evenly

In one of  the apple bowls, put in 2 tbsp of cinnamon sugar, sugar, 2 tbsp of lemon juice, 1 tbsp of nutmeg, a pinch of cream of tartar and stir it together.

Do the exact same thing to the second bowl, putting in the rest of the ingredients.

Assemble the Apple Pie

After an hr or 2, take out  the crust

On a flat surface covered with flour, roll out the crust and make a big circle.

Fill one of the apple mixture into the center of the crust.

Fold the remaining crust to the center to cover the apple mixture

Brush the top of the crust with egg wash

Repeat for the next batch.

Bake for 25-30 mins

You are done!

That wasn’t so bad was it ? 🙂
